The milking process

When the milking starts we take the warm milk and seperate it into the products and sizes required.

The creams and milks are then chilled and loaded onto our refrigerated van ready for delivery.

We use traditional methods for our clotted creams. The cream is cooked over boiling water in stainless steel vessels and allowed to set overnight.

Our butters are made from set cream, by slowly churning until it turns into butter and buttermilk. The butter is washed and weighed, then patted by hand into packs. herbs can also be added at this stage.

Our cows are milked twice a day, in a Herringbone Parlour. We can milk 16 cows at once, and it takes about five minutes for each cow to give her milk. The cows enjoy milking time, it is a natural process. They are fed organic cow feed while they are being milked, each cow gives between 5 and 15 litres per milking.
